In recent years, following the growing spread of healthy eating habits, the consumption of white meat has once again reached peaks of high popularity; in fact, even in the times of our grandmothers, the predominantly rural economy imposed much faster and more frequent consumption cycles for poultry meat, rather than for the more prized beef and pork, whose farming undoubtedly required longer times. Probably for this reason, the traditional recipe for courtyard or farmyard ragù was born, prepared only with white meats, such as chicken, rabbit, and turkey. We have decided to offer it again to our loyal consumers, to provide not only a traditional dish from our lands but also a tasty "light" variant of our famous ragù.
