The series is the result of applying the Japanese principle of Kodawari, which has been our driving force and guiding principle since our foundation 20 years ago. Kodawari means striving for perfection through perseverance. Our series offers the perfect knife for every application in the modern kitchen. Japanese high-carbon steel offers maximum sharpness, edge retention and easy resharpening. The ergonomically optimised handles are made of pakkawood. The material is composed of several layers of oak and walnut wood, bonded with epoxy resin. This material lies comfortably in the hand and is resistant to moisture. A perfect knife is the first step towards a successful cooking experience.
