Location: Ihuamaca, San Ignacio Elevation: 1800 meters Variety: Gesha Process: Extended Fermentation Washed Felipe Carwacinchay grew up on La Lima and has been running the farm for fifteen years. He introduced this Gesha variety to the farm himself, sourcing seeds from past Cup of Excellence competitors in Cajamarca. La Lima’s 1,800 masl position in San Ignacio, right up near the Ecuadorian border is ideal for quality coffee production. The processing is washed, though with a short in-cherry fermentation step first: cherries go into sealed bags for 12 hours before de-pulping, which is skillfully executed to add some complexity to the flavor profile without overpowering the coffees naturally occurring flavor expression. In the cup these flavors read as lemongrass and apricot, with panela sweetness and a rose like floral finish. Quantities are very limited so get some while it’s here.
