Zahara is an exceptionally tasty, structured and balanced Extra Virgin Olive Oil characterised by marked notes of tomato and tomato leaf, mediterranean herbs, thistle, nettle and white pepper. It is obtained from a single cultivar "Tonda Iblea", typical olive of the Iblei mountains in the South-Eastern part of Sicily, considered the best area on the island for the production of olive oil. The olives are delicately picked by hand from the secular trees in the Chiaramonte Gulfi valley. The harvested olives are processed into oil within hours from the harvest in the family mill by cold extracting to allow to bring out the most intense flavour of the olives in each extraction stage.
