Santos is the gold standard of slow-bolting cilantro — bred to resist the urge to flower far longer than standard varieties, giving you weeks more of that irreplaceable fresh-herb harvest. The lush, aromatic foliage is dense and deeply lobed, making each plant an abundant producer from a single sowing. HISTORY & HERITAGE: Cilantro (Coriandrum sativum) is one of the world's oldest cultivated herbs — its seeds have been found in 3,000-year-old Egyptian tombs, and it's referenced in Sanskrit texts dating back to 1500 BCE. Santos was developed specifically for modern kitchen gardeners who wanted all the bold flavor without the frustration of premature bolting. CULINARY TIPS: The leaves are essential in Mexican salsas, Indian curries, Thai soups, and Vietnamese pho — essentially half the world's great cuisines depend on this herb.
