White Manteaux Street, in the Marais district, is home to the Artefact house. Led by Fadel, it supplies us with our matcha tea — but not only that. The Tencha leaves, used to make matcha, are stone-ground on site, just before being delivered by bicycle to Confiture Parisienne. You could call it “minute-matcha.” The green is deeper, the aroma more vegetal, the bitterness more pronounced. And it is precisely this honesty of flavor that we wanted to preserve. What remained was to find it a companion. The easy choice would have been white chocolate, like in almost every matcha spread on the market. It whitens, sweetens, erases. It turns a great tea into confectionery and weighs down the spoonful with fat that adds nothing. We chose almond instead. It has body, flavor, real nutritional value, and the delicacy to stay in the background and let the leaf speak. The almond softens the matcha, gives it structure, and makes it spreadable without ever overpowering it. The spread is a true green — dense, slightly grainy, with a long finish on the palate.
