Three New Flavours Take Their Place at the Princes’ Table! Home to the Princes of Condé, Chantilly Castle has always been a place of celebration and a centuries-old stage for a certain art of living. In Vatel’s former kitchens, above which two floors of pewter and crystal tableware still stand ready, impassive, to receive the great figures of Europe, the echoes of past splendours still linger. Driven away by a Revolution too virtuous to appreciate the refinement of aristocratic dining, the Duke of Aumale, the last great French prince and heir to the Princes of Condé, was forced—like the champagne cork immortalized in Jean-François de Troy’s Oyster Lunch, still on display here—to flee far from Chantilly Castle. Yet he returned and took his revenge on the whims of fate by creating the famous “Princes’ Dinners” in tribute to his ancestors and their distinguished guests. These legendary celebrations, filled with exquisite dishes and illustrious company, once again made Chantilly Castle a true temple of taste. Today, Chantilly and the Princes’ Dinners welcome to their table three 250g creations by Confiture Parisienne, dressed in their white livery and bearing the names: Blackcurrant Raspberry Lily, Apple Lily, and Strawberry Raspberry Lily. There is little doubt that, when the moon casts its mysterious glow between the castle’s pointed towers, the ghosts of the Prince of Condé, Vatel, and Empress Sisi would regard these new flavours as worthy heirs to the great tradition of French culinary artistry.
