For our EVOO it is a cold-pressed, single-origin, monovarietal option; we offer our Ariston Select Extra Virgin Olive Oil. This oil is produced in Gargalianoi, Messinia, Greece, using the koroneiki olive, which is native to our region and naturally high in polyphenols (ranging from 700 to 1000 mg/kg). We do not add any polyphenols—unlike some companies that do this to inflate their numbers for trending shots of extra virgin olive oil on social media—because adding them would adulterate the natural extra virgin olive oil and result in a bitter taste. This is similar to oversteeping green tea; while the antioxidants in green tea are beneficial, too much can create a bitter flavor. Our extra virgin olive oil is made as nature intended, from an early harvest that takes place each fall in Greece. We are a small family-owned and operated company, with my sister and uncle involved in the production in Greece, while we distribute our products to all 50 U.S. states from our office and warehouse in Connecticut since 1997.
