TASTING NOTES: Cherry, Ripe Apricots, Sweet Oats. Jose is a third-generation coffee grower that decided to change the way his ancestors used to grow and process coffee. La Palmera is one of two farms owned by Jose in Pitalito, Huila. He’s blessed with warm afternoons and chilly nights which give the coffee the perfect conditions to thrive. While Jose harvests many different strands of arabica beans on his land, we opted to select his beautiful Pink Bourbon variety. After the cherries are picked, Jose starts the anaerobic fermentation process by placing them in grain pro bags for 12 – 14 hours. The coffee is then de-pulped to undergo a second fermentation in steel tanks. Its just a matter of time when Jose decides to stop the fermentation as this process takes between 3 – 18 hours depending on the weather. The end result of the double fermentation process is a beautiful, sweet, fruit forward cup that’s well balanced and holds up to all brew methods.
