We start harvesting in early October when the olives are in “veraison” - at the beginning of their ripening. The plots that produce this Early Harvest Extra Virgin Organic Olive Oil are located in the Serra de Segura Natural Park, protected by the European Union. These olive trees are found in the mountains and are not mechanisable, so the production of olive trees is limited and with a lot of effort to harvest them. The olives are picked by hand in baskets (“milking” method). Freshly picked olives immediately enter the oil mill. Through a rigorous production process, we obtain our organic extra virgin olive juice by cold extraction.
