Horikawaya has been making this soy sauce for over 300 hundred years without ever upgrading their production methods. Which speaks volumes to the flavor of sweet soy with the slightest hint of smoke and such a balanced umami. The level of flavors are amazing, one playing off each other. Simply put, this is a truly remarkable brew. Produced from only Japanese-grown soybeans, wheat and natural sea salt. Please refrigerate after opening. About the producer: Currently run by 18th generation Nomura-san, Horikawaya Nomura is a 300 year old soy sauce company located in Gobo City, Wakayama Prefecture. Having perfected their methods over centuries, Horikawaya Nomura still uses wood fires to make their soy sauce. The end product is what we believe is one of the world’s best soy sauces.

We cannot wait to grow our collection of Japanese Pantry items! We had a super informative call with Chris and learned so much about the products and barely scratched the surface. The devotion to sourcing & working with multi-generational family farms and businesses is incredible and the products are so good & the quality is impressive. They are worth every dollar. They don't "fly" off our shelves but it's for the more serious cooks! We cannot wait to get more and tell the stories of the brands!

Love the soy sauce. Would recommend asking the company about expiration dates on products before they send them out. My soy sauce and ponzu were barely a year out.
