This is one of Green Dirt Farm’s most versatile and beloved sheep cheeses. Fresh Nettle sheep milk cheese is patterned after Brebis, a traditional French sheep milk cheese, and is similar to ricotta. Our Fresh Nettle has a lemony, grassy flavor that evokes springtime. This light yet dynamic flavor is influenced by the variety of grasses our sheep graze on. Packaged in an adorable 3.5oz tub, a reclosable 16oz size, & a 10lb food service size. Our Fresh Nettle sheep milk cheese is fresh, meaning it’s un-aged. It ripens and drains for 48 hours, after which it is promptly packaged and ready to eat. This sheep cheese has a soft, delicate curd. It crumbles well when cold and becomes more spreadable as it warms up. For people familiar with Fresh Chèvre, that is a good comparison, but without the gaminess sometimes associated with goat cheese.
