Capocollo is similar to what is known as "Coppa," found in Corsica and Northern Italy. Made exclusively with Italian meat with guaranteed supply chain certification. Our capocollo is made from the neck part of the pig. Salted and seasoned with pepper, spices, and herbs, it is brined for about 12 days and massaged daily.
