The secret of Gin Collesi lies in the excellence and variety of its ingredients. Pure water from Monte Nerone and various botanicals: first and foremost, the berries of a fine juniper typical of the Apennines cultivated in the Collesi Estates, and then very sweet strawberries. The botanicals, expertly measured, are left to infuse in a full-strength grain alcohol base; the infusion is then diluted with water from Monte Nerone and refrigerated at –15° for at least 30 hours, filtered, bottled, and left to mature in the dark for 4 long months.
