The secret of Gin Collesi lies in the excellence and variety of its ingredients. Pure water from Monte Nerone, and as many as seven different botanicals: first and foremost, the berries of a prized juniper typical of the Apennines, cultivated in the Collesi Estates, and then visciole (very sweet cherries native to the Marche region), hops, wild rose, walnut shell, and the peel of Italian oranges and lemons. The botanicals, expertly measured, are left to infuse in a full-strength grain alcohol base. The infusion is then diluted with water from Monte Nerone and refrigerated at -15° for at least 30 hours, filtered, bottled, and left to mature in the dark for four long months.
