Monacale olives are a traditional Calabrian recipe, they are prepared only with olives harvested shortly before full maturation, when they reach a purple color, a sweet taste and a pulpy consistency. The olives are cleaned and preserved in brine to eliminate acidity, after which they are processed together with oil, garlic, oregano and hot pepper. Monacale olives cannot be missing in homemade aperitifs with friends, they are also excellent as an ingredient for chicken and rabbit prepared in a pan.
