The 10th generation Motte-Cordonnier is pleased to introduce Fernand (1895-1980)! A farmer at the Chapelle d'Armentières, an army hamlet, he came to collect the drains from the former brewery. Stéphane, who collects our drains today, is their great-grandson! SAISON is a historic, high-fermentation style of free-range beer, which has its origins in Hainaut and the Ardennes. This beer, which has made the brewing legend of these territories, was brewed in winter with leftovers from the grain harvest. Renowned for its beautiful sparkling wine and its dry, thirst-quenching finish, the season watered seasonal workers who came to work in the fields. We tend to say that the brewer brews the wort and that the yeast makes the beer. The taste specificity of the Saison style comes precisely from the very expressive aromas of yeast!
