The Maccarronis de su Ferrittu, or “de Busa”, are a format of pasta typical of Barbagia, they take their name from the tool with which they are prepared and that is the underwire, which in Sardinian is called “busa” or “ferrittu”. The Maccarronis de su Ferrittu are 2 to 3 cm long and 3 to 5 mm thick; they are also tasted as a traditional single dish, they are very nutritious, with red sauce based on sheep meat or sausage from pork and go very well with robust red wines such as Cannonau, Monica, Mandrolisai, and Carignano.
