Traditionally, coconut flour is a byproduct, when coconut oil is pressed from the pulp. Careful drying and grounding guarantees a wonderful aroma for the flour, and it is softer and more aromatic than the traditional byproduct flour. Coconut flour is rich in fibre, with up to 38 grams of fibre per 100g. A tablespoon of coconut flour contains 5 g of fibre. Coconut flour is also low in carbohydrates. In baking, you can replace 10-25% of used flours with coconut flour. Coconut flour is sweet in taste, so you might not need as much sugar as you would without it.
