Wholesale Le Gamay des Colleagues 2021 - Natural wine/Organic wine

It is a light and complex red, the aromas evoke a nut and caramel muffin shared with colleagues, and accompanied by a forest fruit salad. We sipped it with Saint-Nectaire, on Chicago Blues from the 1940s. We are looking for these grapes from the brilliant winemakers, Xavier and Géraldine Cailleau, who work their vines biodynamically. They come from plots around the castle on a soil of spongiary sandstone on clay-limestone. We harvest the grapes by hand and then we put the boxes in refrigerated trucks. 4 hours on the road then, arriving in Courbevoie, we continue with the winemaking process. The grapes reach 8°C in the cellar. 80% of the bunches are put directly into a tank that is saturated with carbon dioxide.
