Dry summers and long, harsh winters with marked temperature fluctuations throughout the seasons. VINEYARDS PREPARATION NOTES Manual harvest in containers. Separate vineyard by vineyard production in order to get the best out of each farm. Prefermentative cold maceration. Alcoholic fermentation at a low temperature (less than 2ºC) in order to keep the fruity character and freshness intact. Malolactic fermentation and aging in 225 l barrels.
