The grapes are harvested at perfect maturity to express the optimal potential of the grape variety. A meticulous sorting of the harvest is carried out during picking and upon receipt of the grapes. The grapes are destemmed and cooled to 8°C. A skin maceration of 12 to 24 hours is then performed to extract the aromatic compounds from the skins and pulps. The grapes are then sent to the press to extract the must. Particular attention is paid to pressing to retain only the first, most qualitative juices. The juices are then clarified more or less depending on the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The uniqueness of this grape variety lies in its great aromatic richness and its very stable aromas in relation to oxidative phenomena. Finally, after a light fining, bottling takes place quite early to preserve the fresh and fruity character of the wines.
