On the palate, it is only soft and delicate with original notes of plum, almost plum alcohol, and vanilla. The olives are harvested at full maturity and stored in palox sheltered from oxygen. Then begins the work of a light fermentation thanks to a specific know-how in order to reveal the taste of candied black olive, combined with the oils formerly produced in traditional mills with granite millstones and scourtin presses. IN THE KITCHEN: We suggest you combine this oil with grenaille potatoes, autumn vegetables such as butternut or carrots.
