The project has roots in central Italy with the typical cultivation of chickpeas, face lentils and peas and with the centuries-old adaptation of the kitchen to it. In the Piceno hinterland and within the Sibillini National Park — a predominantly mountainous territory that has seen the flourishing of western monasticism, recognized as a forerunner of culture Mediterranean rural culinary — the company's activity begins with the experimentation of a production aimed at the greater consumption of legumes, grown on organic land and transformed into pasta thanks to obtaining the relative flour and adding only water. It is from the monastic cuisine that Monte Monaco decides to take inspiration, reshaping in a modern key the original symbiosis with the environment and both food and therapeutic functionality, typical of the daily life of monks.
