Cast iron retains heat and diffuses it slowly, distributing it evenly, which is why it is possible to turn off the stove early and finish cooking the food with the heat off. For the first use, grease the cooking surface with some cooking oil, heat for a few minutes to let it evaporate. Hand washing is recommended after allowing it to cool.
