We see roasting as part of the larger collaboration between our farmers, sourcing partners, and ultimately baristas and coffee lovers. Our goal as a coffee roastery is to recognize the intentions of the people who contributed to the production of our coffees and to express these intentions through our work. Coffee is a fruit, and you should be able to taste that in the cup. Roasting is the crucial step from green raw material to finished coffee. For us, it is also the most exciting. We roast our coffees to light filter coffees up to medium dark espressos. In doing so, we try to represent the respective coffees as light and medium. We roast all our coffees slowly and gently, and they receive individual attention from us. ;-)
