Our marsh is composed of 22 salt areas. Our operation is located in the heart of the salt marshes of the island of Noirmoutier in a landscape shaped by humans since the 5th century. All herbs, spices, and condiments are certified organic. All our bags are made of ribbed Kraft paper lined with corn starch to ensure the waterproofing of our products. We hand-stamp all our bags and labels with water-based ink. Thus, our bags are fully recyclable. The "grey" coarse salt develops on the bottom of the basin, on a bed of natural clay. During its crystallization, it becomes enriched with mineral salts and trace elements such as calcium, iodine, magnesium, sodium, potassium, iron, manganese, zinc, fluoride, and copper... The fleur de sel, on the other hand, forms a thin layer on the surface of the water, similar to frost. It is a finer, more colorful crystallization, leaning towards pink, and has a scent at harvest very close to violet. Much more "delicate" and rare, it is harvested after a day of east wind, which is a dry and steady wind that dries the surface of the brine.
