About FALLING BARK FARM

We are Dan & Robin Timmons from rural Frederick County Virginia. We produce our hickory syrup in small batches from select hickory bark after foraging and wildcrafting in the Virginia forests. Generally we use the bark from the shagbark hickory trees, which sheds naturally so as not to harm the tree. However, we do not limit ourselves to this particular species. We will repurpose bark from other species as well, keeping our process totally sustainable. For centuries, Native Americans have used a decoction of the hickory bark for its healing properties since it is very high in magnesium. Suggested uses include drizzling the syrup over sweet potatoes, butternut squash, french toast, pancakes, and ice cream.....caramelizing bacon, glazing salmon or a holiday ham, or creating a craft soda, or one of your favorite cocktails.....even a salad dressing or a meat marinade are in the realm of possibilities.
