At Faire, spotting what’s next is our specialty, and this month, we’re serving up what consumers are sipping, snacking, and savoring this season.

Powered by Faire’s unique data insights, we have everything you need as you begin your summer sales discovery from top searches to the viral trends that drive them, paired with the perfect product recommendations for your shelves.

For Faire foodies, come see us at the Summer Fancy Food Show at the end of the month! Read on for what we think will be taking over the show floor—and how you can stay ahead of the curve.

Matcha

Clevr Blends – Matcha Superlatte

According to Food Navigator, matcha holds a global market value of over $4 billion. The earthy green tea from Japan has gone far beyond a simple coffee alternative—The Economist calls it “The drink of the moment”—as consumers are using it not just for their matcha lattes, but for desserts, snacks, and savory applications, as well.

Why are shoppers loving matcha so much? From its eye-catching color to its rich grassy flavor, matcha also boasts a variety of wellness benefits that health-conscious consumers care about. And while skyrocketing demand and poor weather conditions contributed to a global shortage of matcha last year, the industry is bouncing back. In fact, searches for matcha on Faire were up 65% quarter over quarter in April 2025.

If you want to get in on this trend, start by stocking good quality matcha, like a ceremonial variety from DONA. This small-scale supplier sources its matcha from family farms, so the leaves are freshly milled, and tasting notes are smooth and toasty, with a clean finish. If you’d prefer an organic variety, there’s Tori Chan. Offered in a delightfully pink (and giftable) tin, this matcha is grown in the volcanic soil of Kyushu and is stone-ground in small batches to ensure freshness. Another bestseller is Hikari, a single-origin matcha that’s grown in the shady hills of Shizuoka. It’s also stone-ground to order for pureness and clarity.

To complement your tea collection, you can also stock matcha tea sets that include everything an enthusiast would need, including a bowl, bamboo whisk, whisk holder, and spoon. This tea set comes with its own matcha included.

Beyond beverages, consider matcha-infused snacks and sweets, like matcha alfajores, matcha chocolate almonds, and a matcha chocolate bar with caramelized sesame. Any of these would make for a delightful and on-trend gift for hosts or a sample at store trunk shows. Hold a package back for sampling and watch shoppers convert!

Dubai chocolate: Beyond the bar

Carian’s Bistro Chocolates – Viral Angel Hair Dubai Chocolate Bar – Pink Cotton Candy

While we covered the explosion in pistachio searches in our April report, consumer demand has remained high into June. One big and sweet reason for this interest is the Dubai chocolate bar, a TikTok sensation so popular that supermarkets are struggling to keep up. On Faire, searches for “Dubai chocolate” were up 248% quarter over quarter in April 2025, and searches for “kadayif” and “pistachio cream,” the two key ingredients that make up this sweet treat, were up 10x and more than 2x, respectively, in the same time period.

Of course, as confectioners and cooks get more creative, we’re seeing new ways for consumers to partake in the Dubai chocolate trend, from Dubai chocolate pancakes and cupcakes to Dubai chocolate lattes and more. “Shake Shack launched a limited-edition milkshake in April with the flavors. Crumbl is working on a brownie spinoff,” reports CNBC

Here are a few of our favorite Dubai chocolate–inspired options for your shop:

  • Stuffed Dubai Chocolate Pistachio Cookie: Picture the Dubai chocolate bar in cookie form. A soft, chewy cookie encasing a rich pistachio cream. Move over chocolate chip cookies. There’s a new player in town.
  • Dubai Chocolate Pistachio Bonbons: Instead of a box of caramels, try these crispy kataifi confections enrobed in milk or dark chocolate. Cut up a few samples in your shop and see what consumers think of this trendy sweet treat.
  • Dubai Chocolate Syrup: Make any latte a Dubai chocolate coffee drink (or any ice cream sundae a Dubai chocolate–drizzled dessert) thanks to this dairy-free and vegan Dubai chocolate syrup.
  • Viral Angel Hair Dubai Chocolate Bar – Pink Cotton Candy: Go beyond the classic Dubai chocolate bar with vibrant pink cotton candy. Kids and adults alike will delight in this sweet treat that combines nutty pistachio, tangy pomegranate, and of course, rich chocolate.

Sardines

Patagonia Provisions – Sardines in Coconut Curry Sauce – Tinned Fish

It’s “Sardine Girl Summer,” declares USA Today, and this isn’t just about the tinned fish and its health benefits (though there are many). Indeed, tinned fish isn’t just showing up on plates: It’s a fashion icon, making its way from tables into closets (just search “sardine dress” on Google). And should the savory fish not be to your liking, consumers are snapping up the sweet versions, as well, according to Eater

On Faire, searches for “sardine” were up 125% year over year for April 2025, and searches for “tinned fish” were up 28% during the same time period.

If you’re looking to stock actual tinned fish, we recommend starting with Fishwife sardines for their eye-catching packaging and fresh flavor. Matiz is another storied brand, respected for quality—its sardines are wild-caught in the eastern Atlantic and hand-packed in Galicia, Spain. For a vibrant, comforting meal on the go, there’s Patagonia Provisions’ sardines in coconut curry sauce. Like all goods from Patagonia, these sardines are responsibly sourced from family-owned fishing boats in the Cantabrian Sea.

Then there are the sardine-themed home goods and accessories to pair with all those pantry goods, from a charming sardine notebook and trinket dish to tea towels, cosmetic bags, and charms

Cocktail kits

Mixly – Modern Cocktail Kit

After the holiday season, summertime is one of the highest sales points of the year for alcohol, and searches on Faire reflect the same. But within this category, we are seeing a huge surge in interest for cocktail kits: Search for cocktail kits increased by 1,070% in April 2025. Why? Cocktail kits make summer entertaining simple. Everything you need is right there to get the party started. All shoppers need to do is mix things up. Plus, cocktail kits come in a range of options, whether you opt for Delish’s proclaimed drink of the summer, the Naked and Famous, or the ever-popular espresso martini. You can even pick cocktail kits to go with a certain theme—midnight margaritas to celebrate the return of the Practical Magic movies, perhaps, or a cosmopolitan to welcome the new season of And Just Like That

Here are just a few cocktail kits to stock for summertime fun:
