After being delicately selected, Chocolatier's iced chestnuts are cooked with precision to obtain the ideal softness. They are then immersed for several days in sugar syrup and then stabilized to finalize the confectionery and preserve their subtle taste (ten days are necessary for successful confectionery). The “à la française” icing coats the chestnuts with a thin layer of sugar before being dried.
