This coffee is the first coffee we are pushing as a single source. While our dark roast has been detailed as being the Papua New Guinea Lamari, we could replace it with a similar bean if it ran out and still have almost the exact same Dark Roast. Going the single source route then means that this could become a seasonal roast once it is gone.Our Costa Rica Medium Roast is a fully washed bean called La Pastora SHB. The term SHB stands for a bean that is a Strictly Hard Bean, meaning that it was grown between 1,500 and 1,800 meters above sea level. The higher altitude has lower temperatures which results in the coffee fruit (cherry) to mature more slowly, creating a more dense bean.The sensory notes are citrus fruit, cocoa/nutty, floral and silky.
