Almendra Blanca, or “white almond”, is rare and precious precisely because of its white and acidic seeds, very fine, perhaps originating in the Amazon, which now only small producers continue to cultivate, preserving so is the delicacy of these plants. Even for this cure, the result is extraordinary: in the mouth the chocolate becomes sweet and elegant, quivering with exotic fruit, so much so that it does not need to be softened by sugar in any way.
