Orecchiette is Italian for small ear, meaning that the name comes from the pasta's shape. This pasta is an authentic regional product from the southern region of Apulia. Made from durum wheat and dried slowly at a low temperature (maximum 100°F) for more flavor. Only natural colors and flavors have been used in this orechiette: spinach, basil, beetroot and tomato. For an authentic Apulian regional dish; mix the orechiette with broccoli, garlic, anchovies, and crème fraîche.
