It produces a fruit that contains highly sought-after fragrant beans, which require special processing to develop all their aromas. They are mostly produced in Venezuela. The beans contain a natural aromatic organic substance, coumarin, which evokes vanillin and is highly prized by perfumers. The scent is sweet, immediately evoking vanilla and bitter almond. It is followed by more subtle notes of sweet almond, orgeat, prune, hay and tobacco. Usage tips: These beans are used grated, either directly on your dish, or infused in a cream or a syrup for desserts. You can pair it with delicate fish such as trout, with a chicken supreme, in a delicate soup, with tomatoes and potatoes. In sweet applications, it is perfect with chocolate, melon, cherries, oranges, rhubarb, apricot, coconut or with honey.
