Description
A unique red raisin wine, obtained from the native vine of the same name whose history is documented from the first half of the 14th century. Harvesting is late, usually taking place at the end of September, beginning of October; the ripening and concentration of sugars takes place on the vine. After careful harvesting, the bunches are cleaned by hand of any defective grapes that could cause problems during the drying process, on frames or in boxes, in naturally ventilated rooms. After about 3 weeks, the grapes are pressed and fermented. According to specifications, it must mature in barrels for a minimum of 18 months. In our cellar we usually keep it in steel for a minimum of 24 months and finish the maturation and stabilisation in the bottle for 2/3 months before putting the product on sale.
