A few kilometres from the bay lies a protected, preserved tropical forest listed as a UNESCO heritage site. It is in this unique terroir that a few small producers of pepper and vanilla are found, including Mrs. Fow Heng, who has lovingly cultivated pepper in her orchard for 20 years, helped by a few gardeners. The pepper from this fabulous place is produced in very small quantities, making it an extremely rare and unique pepper. The berries are selected according to their ripeness and hand-recorded with great care. The berries are then sorted, washed and sun-dried for several days. Madagascar black pepper develops warm, indulgent, brioche-like notes, pine nut and black tea, accompanied by fresh mentholated hints and green fruit. It develops a warm and delicate heat. Usage advice: This is a sublime pepper to be ground or crushed at the last moment, just before using. The flavors it develops make it an excellent pepper for everyday use. It pairs wonderfully with meat and white fish such as sea bass or monkfish.
