It starts with the tang of currant and strawberry-rhubarb pie, then has a toasted marshmallow, caramelized sugar finish. Coffee has been growing in Honduras for centuries, but for a variety of reasons the country has never been able to put together a strong coffee economy. It’s generally accepted that the first coffees were brought here from Costa Rica and mostly used in large commercial operations up until the last decade or so. There’s been a renaissance within the industry there to shift production towards specialty grade coffee, and this is an example of that happening. The co-op that produced this coffee was founded by small farms with the mission to bring together knowledge and equipment to produce great coffee, and we love it.
