We Taste: Apricot, Honeysuckle, Citrus A delicate cup with notes of apricot, orange, and a lingering honeysuckle-like sweetness. Grown and meticulously processed by 15 women in Rwanda’s Gakenke District, this lot, named Ikizere (meaning "confidence" in Kinyarwanda), is a symbol of resilience and empowerment for single mothers and widows. Supported by fair compensation, agronomic training, and community reinvestment, this coffee celebrates both people and place. We selected it for its clarity, structure, and standout sweetness—a true expression of Rwandan terroir. The coffee undergoes meticulous sorting and floating to select the best cherries, followed by brief fermentation, depulping, washing, and density grading. It’s first dried on shaded beds, a unique Rwandan “skin drying” step, then moved to semi-shaded raised beds until it reaches the ideal 11% moisture content.
