At some point in everyones life, either through travel or a fantastic meal with friends who wish to share a taste of home, they are introduced to a cuisine, flavour or dish that they fall in love with. Jerk cooking is it for me, this is my take on a cuisine rich in flavour, culture and history.  Pro Tip: Use dry or mix with white vinegar, lime juice and oil to make a marinade.
