Piperade in jars is a typical Basque preparation, which differs from ratatouille by the absence of zucchini and eggplant. We buy our tomatoes from local producers such as the Bastelica family which grows old varieties behind Aire sur Adour. Grown in the open ground on the slopes of Chalosse, Gers or Lot-et-Garonne, our tomatoes, peppers, onions and some famous sweet peppers from the Landes, deliciously stewed by long cooking, accompanied by aromatic herbs, bring to your plate all the flavors of summer.
