To prepare it, simply gently heat the cassoulet in a saucepan or in the oven in an earthenware dish, which allows for a slight gratin crust on top. It is enjoyed as is, but can be enhanced with a bit of breadcrumbs, chopped parsley, or garlic rubbed on the dish before baking. Served piping hot, it pairs perfectly with a red wine from the Southwest.
