The tuna, caught in the Oceans, is frozen on board the fishing vessels and transferred to the Syracuse plant where the necessary documentary and quality checks are carried out, such as testing for heavy metals like mercury and lead, species analysis, radioactivity and histamine. Subsequently the tuna is cut, thawed and cooked in water and salt to preserve all the organoleptic characteristics of the product and its nutritional values. Once cooled, the fish is transferred to the cleaning department where it undergoes careful cleaning and quality selection, entrusted, as in the past, mostly to women. Careful hands, through the art of trimming, are able to transform the loins into pieces and to package true works of art resulting from a meticulous artisanal process. After trimming the tuna fillets are jarred manually using a procedure that is still completely artisanal but guaranteed by significant safety and hygiene measures. Once the jars are filled they are topped with olive oil and transferred to autoclaves for sterilization. After this phase, some samples are taken for analysis.
