Recipe Inspiration / Receta Sugerida — Adobo de Puya for Birria Ingredients (for 4 lb meat): 8 puya chiles + 4 guajillo chiles (toasted & rehydrated) • 4 garlic cloves (roasted) • 1 inch fresh ginger • 1 tsp cumin • 1 tsp Mexican oregano • 1 tsp cinnamon • 4 cloves • 2 tbsp apple cider vinegar • 1 cup beef broth • Salt to taste Steps: 1) Toast and rehydrate all chiles 15 min. 2) Blend with garlic, ginger, spices, vinegar, broth and salt to a smooth paste. 3) Strain. 4) Coat 4 lb beef chuck or goat meat with the adobo, marinate at least 4 hours (overnight is better). 5) Slow-cook in a covered pot or pressure cooker 2–3 hours until meat is fall-apart tender.
