Our Vermicelli glass noodles, made from sweet potatoes, are convenient to make in their own included cup -- just add hot water. They are low glycemic index and compatible with Paleo and other moderated-carbohydrate diets, but mostly you won't believe how delicious they are. Most ramen soups are made from wheat noodles or rice noodles, but we wanted noodles that would rehydrate without being cooked on a stove and are still 100% gluten- and grain-free.
