Carm’s Choice is Uncle A’s newest sauce made with Orange Scotch Bonnet peppers. When combined with lemon juice and passion fruit juice, it creates a slightly fruity and citrusy flavored sauce! The Scotch Bonnet is an often-under-used pepper with a solid heat level and plenty of delicious flavors. The Scotch Bonnet is named for its supposed resemblance to a Scottish “Tam O'shanter” bonnet. This sauce is as amazing, and unique, as my Scottish wife, Julie Carmichael! You can use Carm’s in a variety of ways. Use it to make Jerk seasoning to flavor dishes and coat deep-fried foods, for dipping and marinating meats and seafood, or use it to garnish your favorite salads and cocktails to add a fiery heat.
