Together with orecchiette and maccheroncini al pettine, it is one of the formats from Pastificio dei Campi that are produced with a special machine: the baresina. It is a format of Ligurian origin, whose name derives from the Genoese dialect term "strofissià" (to rub), which indicates the movement necessary to manually shape this pasta.
