SITUATION Plots located in the northern part of the prestigious Châteauneuf-du-Pape appellation. VINEYARD AND TERROIR Old Grenache, Syrah, and Mourvèdre vines planted on sandy soils, providing a finesse and elegance characteristic of this terroir. GRAPE VARIETIES Grenache noir, Syrah, Mourvèdre. PRODUCTION 100% destemmed grapes. 30-day maceration with two rackings at the start of fermentation, then two pump-overs per day. 50% of the blend is aged in vats, and 50% in 450L barrels of 1 and 2 wines, for 12 months. TASTING Complex nose of plum, black cherry, with a hint of cocoa and clove. Full and balanced palate, with extreme finesse and remarkable length. SERVICE AND PAIRING 17-18°C to allow its full complexity to express itself. Decant one hour before serving. Pairs well with duck in green pepper sauce, guinea fowl, or pheasant.
