Our Picual is harvested in our olive grove in mid-October, just before the olives begin to change color, offering an intense green color with a high level of chlorophylls, giving them great vitality. On the nose, we quickly perceive a very young fruitiness of green grass, banana, tomato plant, and green apple. When tasted, it maintains the herbaceous nuances. Accompanying the fruitiness, we also find a pleasant spiciness that evolves in the throat, with a slight bitterness that lingers in the mouth and a very balanced structure.
