An out of the ordinary pesto: vegan, light, delicious. This pesto contains all the flavor and freshness of paccasassi, to season pasta and bruschetta quickly without sacrificing quality. Paccasassi, the dialect name for wild sea fennel, is a spontaneous aromatic plant typical of the Conero Riviera. With an iodized taste and strong citrus notes, the leaves evoke hints of fennel, carrot, lemon and have precious nutritional virtues given to the abundance of cartenoids, flavonoids and vitamins. Protected by the legislation of the Conero Natural Park to protect biodiversity, Rinci grows them inside the park. Paccasassi are combined with many ingredients, they can enrich simple recipes and be the protagonists of more elaborate dishes.
