Inoculated rice, salt, and water ferment to produce a burst of umami that keen chefs are using to impart memorable flavors into their menus. 3 flavors available! Pickled chili pepper mash, black garlic and yuzu zest are each combined with the shio koji and the result is an exciting condiment line up that captures spice, sweet & savory, and floral citrus flavors. Product is good - but the packaging and slow order time drops this down. Our products came with slapped on labels and mismatched tops (some were green, had to double check it was the correct package).
